That honey and apple typicity leads to candied tropical fruit. Pullman bread. Bubble structure unbalanced with high acid and mineral at the forefront. A little sweat. A bit narrow. A bit lean. A bit primary.

Certainly worth trying, but the balance wasn't really there. Not sure if they tried anything tricky with the dosage, but the acute dryness exposed every flaw like a tight jersey dress!

Sparkling Chenin Blanc is the bubbles go-to. Especially when there's one from the Loire Valley, made in traditional method. All the joy of Champs at half the price. Plus the lovely tropical fruit notes Chenin brings. Slurp.

Bottled on 12/17/2014. Chenin from vines grown on limestone in the Saumur region. Aged one year in Oak barrels and one extra year on lees. Organic.
Tart, no sweetness but some subtlety, utterly thin bubbles, zero acidity yet uncrisp, definitely interesting - I thought I loved Chenin varietal but apparently not in its bubbly Brut form.
