Day 4 and just as pretty as on day 1. Luis-Antoine says that since this is made in open fermenters it's already predisposed to air. Red raspberry, bing cherry and subtle pink peppercorn spice.

Reminds me of gamay. It's hazy and ruby in color with fresh red berries and gravel on the nose. Low in acid and tannins n, light bodied, with flavors of strawberry fruit leather and snow. Easy, yet interesting.

Only the 3rd Pais, or Pipeño I have had, this one shows sharp, high acid fruits, that end with proportional skin tannin/oak aging.
The label says 750, the bottle says liter. Still a pretty penny to pitch for the quality.. fun, yet not a crowd pleaser.

A friend who knows I love Pinots dropped this in my lap. Nose very light with dark berry fruit, muddy earth and its label (like a picturesque mountain view from the plains.) it's also exactly how it tastes. Grasslands and earth with acidity that creeps up at the end. I'll be buying another bottle.
