Definitely serious rosé. Almost stern, like it’s looking down its nose at us for expecting anything as frivolous as a crisp and lively Provençal rosé. It has weight and textures and is almost a bit much as an aperitif, but all makes sense when the food arrives. It paired well with baked salmon and could probably take on more serious dishes — I can see it working well with charcuterie on a spring afternoon. Good concentration and length. Interesting wine.
