First course is, Hungarian Cherry Soup, Dill. Fennel Pollen, Sour Cream. Excellent. Soup has cherry, dessert wine and sherry, fill and fennel garnish.

Tempier slides nicely through it.

The 2015 Tempier Rosé is drinking marvelously after a few years. The grapes used to make this rosé come from selected parcels where the vines are on average 20-years-old. This wine immediately awakens to aromas of rose water, lemon zest, smoke and ripe guava that are simply sensational. The palate unveils a wonderful concentration and a gorgeous, soft texture. Guava purée and red cherry candy flavors connect with suggestions of blood orange toward the back end. Truly delightful to savor now, this beautiful Rosé will continue to evolve in the cellar over the next decade. Drink 2019-2028- 92

Having tasted so many rosés leading up to tasting this for the first time makes it's influence massively apparent. All of my favourite roses past seem to have aromas and are structured in its image. None of them feel as effortlessly balanced. A benchmark no doubt.

One of our favorite Rosés. Now that the 15 has settled in the bottle for year, time to enjoy. It's simply just better a year down the road. On the nose, bright, lean fruits of; strawberries, cherries, tangerine, watermelon. Sea spray, limestone & fresh pink florals. On the palate, the body had a presence of gluey. Fresh, bright, lean fruits of; strawberries, cherries, tangerine. Watermelon, grainy minerals, limestone, perfect level of chalkiness (big but not overpowering the fruit), saline, pink flowers, beautiful, round, soft acidity and a round polish finish 50-50 fruit and earth. Photos of our trip there in April 2016. Estate vines, large oak vat cellar and road signage. Added, are those beautiful Mourvedre grapes being harvested.
