Nov 26th, 2018Very reductive when opened (wish I had some copper with me then). Drank well after an hour decant, but best the day after. Smelled like olive tapenade with light soy, and dark fruits. Revealed some violet tones as the H2S/mercaptans blew away. Palate had a lovely salinity, herby and meaty. Beautiful texture. A delicious savoury drop.
Note: Carignan, Grenache, Cinsault, 50/30/20. Wild ferment; no racking (reduction 😬), fining, or filtering. 3-4 weeks maceration in cement tanks - punch down only, followed by aging in stainless steel and cement. Basket pressed.
