A year ago today, with the help of Mr. @Andrew Fortgang there was an amazing Roumier dinner at Little Bird. I broke my wrist the next day.

Decided to open up a simple Roumier to celebrate. This 2011 was in a nice place, red fruits, pitched deeper than expected, with freshness and enough energy within the oak. Will get better but drinking great now.

So here’s the deal. You MUST, I repeat MUST decant this and give it at least 90 minutes to air out. If it’s too cold then maybe longer like this one was. At the 2 hr mark it began to open up beautifully.
