Wine of the night. It reminded me of a 1993 Chambolle with its voluptuous, savory Pinot fruit and darn near infinite finish. A fantastic partner to lobster ravioli with caviar.

Dom Perignon P2, 1993. Pale golden hue. More refined and closed on the nose than the '95. Seems even more youthful and fresh. Quite primary. Subtle toast, biscuit and citrus notes. On the palate, good fresh acidity, medium plus concentration and decent finish. Seems youthful and yet to fully express itself. With air, opens up and develops a honey biscuity note. Slight lack of depth of fruit. Drink now until you die.

Opened on New Year's Eve 2015. Pretty amazing 23 yo champagne. Color had not changed. Cork in good shape, depth of flavor there. Bubbles good on pouring although dissipate more quickly than younger wine. I would say drink now. I had a backup champagne in case this has turned but definitely no need for the backup
