Good acid line, yet softened by time sur Bois and lie. Impressive length and persistence.

One of the best Australian sparkling I ever tried

This is some pretty damn delicious Aussie bubbles. Complex and evolving in the glass. Plenty of that delicious nutty, bread-y, brioche thing going on, along with green apple tartness and other fresh fruit. Lingers rather than vanishing like some bubbles.
