Old bush vines in Xaló, made by Violeta Gutierrez de la Vega and her husband Alberto Redrado. Foot trodden, whole cluster fermented, aged a year in French barriques and another year in an old American oak foudre. Very savory, black cherries dipped in balsamic vinegar and rolled in dried herbs. Somewhat similar to vermouth or Barolo Chinato.

Garnacha from Alicante (locally called Giró I believe), a small parcel of old vines tended by a husband and wife. Juicy Bing cherries wrapped in wildly feral leather swaddling. Extremely bright acidity, and BBQ friendly.
