Brilliant electric acid meshed with a melody of citrus fruits and spice. I have a feeling there was some skin-contact, fruit is biodynamic and it easily manages the mild wasabi heat with sushi & sashimi.

Heavy apple on the nose. Sparkly and bright, but full bodied for a white -- a tiny bit sweet, but the acid balances it nicely.

Partially skin fermented, slightly oxidized, tastes of cinnamon apple cider. Sort of a rounder version of Uncouth Vermouth's apple mint.
