Cloudy beige gold. Tiny bubbles. Blousy nose of dried quince and mushroom. Palate like chewing dried quince and a Popsicle stick at the same time with some spice and flat menthol in the finish. Bites you back like a good wine from Le Sud-Ouest should. Verdict: delicious.

Quite lovely. Funky, cidery sparkling wine. Some serious minerality, herbal, off dry. Really lovely sipper and just great on its own.
