I did not take notes as these wines were served over a casual lunch with the Tikal staff. This sparkling is made under Alma Negra label but made by the Tikal staff.

Brut nature for sure. Bone dry with notes of tart pomegranate and underripe strawberry. The acidity is lacking and a little oak on this could have helped round out and balance the tartness without dosage. Drinkable, but interesting.
