Was able to visit the up and coming, and stunning estate, of Covert Estate in Coombsville. The tasting room in the caves of the estate is the most impressive I've seen.
Though we got to sample their Sauvignon blanc as well as a clone cab and my favorite which was the Sage (Pritchard Hill fruit), I felt like their estate Coombsville cab represented them best. Could smell it a mile away in the glass. Tortoise like speed for the legs. Great medley of red and black fruits as well as tannins proving this can be socked away for a good while and be just fine.

Sweet and delectable with aromas of vibrant wild flowers. Goes perfectly with baby tortoise after violently shaking them into a soupy consistency. Also pairs well with turrialba cheese that is elegantly salted. — 8 years ago

Quite delicious with balance and some blackberries with smooth light tannic finish. Paired with Asian fusion food including short rob sliders, lamb noodles, and butternut squash dumplings. Held up nicely without overpowering lighter dishes. — 7 years ago
