Tatsuriki Terroir Yamada Nishiki Junmai Daiginjo (sometimes marketed as “Tatsuriki Terroir Kome no Sato”)
This was all part of our Sake Day 2025 experience. We only tasted 60ish sakes out of an estimated 450, so a small fraction of what was available. While I attempted to rinse the glass with water and stay hydrated it’s difficult to fairly rate in this environment and I use it solely as a time to try a wide variety and interact with the brands.

Shishi no Sato Aiyama Jummai Daiginjo Sake

Lightweight on the palate, I get a quick hit of melon but then it fades to a bitter hit with some heat that sticks for a while. — 4 months ago

L'atypique Central Otago Pinot Gris 2013

This is much more elegant than the 2014. The wine is much more similar to a typical red wine in its tannin structure and flavor profile. I'm really digging this. It drinks so well. This was on the skins for ~40 days versus the 14s ~100 days and didn't see any sulfur. In addition to less extraction, I really think the extra year in bottle does a lot for these wines. No rush to drink them. — 9 years ago

L'insolite Central Otago Pinot Noir 2014

Bam! Holy crap. One sniff and this wine captivates you. Incredibly beautiful, floral, whole cluster Pinot nose. I just kept smelling it and forgot to actually drink it for a while. Elegance and finesse are what I smelled, but the palate had the structure/seriousness/power Otago Pinot is known for but harnesses and refined.

No sulfur(maybe a bit at bottling). 100% whole-cluster, carbonic, Abel clone.
