Perhaps the most surprising and fantastic food/wine pairing of my life: 87 Joly CdS and a Niman Ranch bacon sandwich on potato bread with a spread of Mayo as thick as my head felt this morning after a dinner with a legend. The acid in this 1987 made German Riesling seem as alkaline as lye. It shook the bacon from the inside of my cheeks and concentrated its intensity on the middle of my palate. Tonight I am going back to one of my favorite areas for Pinot Noir, the Willamette Valley. This is the first time trying the Adelsheim Winery though I have heard great things about them. On the nose we get strong fruit forward aromas of strawberry, cherry, raspberry and a moist morning dew soil. The red fruit continues through to the palate. The strawberry & raspberry continue though a bit on the light side. There is a smooth mouth feel with a nice acidity and minerality notes. The acidity helps in the length of this Pinot which I truly like. — 11 years ago
