FRESH. SUPPLE. SOFT. Tart cherry, touch of anise and a very punctuated finish. Some tannins but nothing overpowering. On the nose get some herbal notes but again, nothing overpowering. Only de-stemmed and not crushed, 5 day maceration, stainless steel, unfiltered. Very fun. Serve with slight chill. Cousin/basically brother in town, always whip stuff out to entertain us. Anyways this is wildly rich with a purple cassis and dark chocolate tone. It surrounds the nose with dark cherries. As it opens you get like a pile of mashed blueberries/huckleberries going on. There's a 6 foot wall of tannins your palate has to jump through every sip but its deliciously coated with green chiles and the menthols we smoked. DONT WANT TO RAMBLE, but the depth of lush earth if that is a thing is key here. Think stewed plums, melted dark chocolate, a Cuban cigar level chewing tobacco. It's rich powerful and elegant. This review is over an hour and I just keep writing.. so maybe let it wait an hour then drink?
