Very fine mousse. Aromas of a partial #barrelfermented base wine and lees, vanilla, cream and pastries. On the palate it has surprising citrus and stone fruit and a touch of elderflower. #southafricanwine #capeclassics — 8 years ago

Rich & complex yet very, very elegant. Brilliantly integrated wood with yellow Mirabelle plum, honey melon and a touch of salty caramel. Impeccably balances and with a finish that goes on and on. You gotta love good Chenin from the Loire. — 9 years ago

L'Amateur Extra Brut Blanc de Blancs Premier Cru Chardonnay

This is LV14. No dosage. A year and a half since my last btl, roughly. On the nose: melon, with creme fraiche, basil, meyer lemon, meyer lemon zest. Not sure I would believe BdB blind. Color suggests skin contact...almost soft peach. On the palate: aggressive mousse at first...maybe needed a decant. Lovely acidity, lime, bitter citrus, a touch short, and very juicy on the dense and tangy finish. A stunner. — 5 years ago

The Steven Kent Winery

The Premier Livermore Valley Cabernet Sauvignon 2009

I think this is my favorite wine from steven kent. Would love to try this against some good vintage lineages. It's got a great nose, mouth watering acid and flavors, and enough tannins to get your attention. Not dark dark fruit. More mixed with prominent red fruit. Really in a nice spot. These wines are really meant to have this kind of age on them. — 8 years ago

OMFG. This nose is insane. Insane. Just the most pure black cherry ever. God’s Jelly Donut filling. Earthy, graphite? Tiny berry fruit intensity. Wild flower that is crazy. Smells like a scene in nature. Wow, the sweetness is BONKERS. Unreal purity. So balanced and pure. Texture is seamless. Huge amplitude and minerals. Tingly saline mineral note. Minerality and more mineral than the whites. The finish has tiny berry fruit intensity and echoes of flowers. What a finish. How is this better than the Cras?

Now the nose gets herbal. Complexity is off the charts. Raspberry spice cake on the nose now. This is some of the most beautiful fruit I’ve ever had in my life. But the finish is glorious minerals intermingled with fruit.

Yeah, you've got it. It's to separate those nasty aromas that you might get from mercaptin in unhealthy reduction environments. The winemaker at Von Winning first used it around me and I stole it from him. It's pretty complicated and I don't totally understand it, but it starts from having sufficient nitrogen levels in the ferment to create a healthy yeast population, from there it involves longer term lees aging. The lees act as a battery to suck up oxygen, so they keep the wine fresh, but they also impart and aroma, kind of like autolysis. For me it's easiest to spot in Burgundy because Chardonnay is so neutral. It shows up as a sort of shaving cream and marshmallow fluff aroma, sometimes mint. It also compliments mild new oak. Coche or Roulot would be big Burgundian practitioners, but there are many others. In the new world it's easily spotted on the Chardonnays of Kongsgaard, Sandhi, Aubert, Ceritas, Kumeu River and Montelena, just to name a few.
