Deep ruby in color with a brick rim.
Fruity on the nose with blackberries, cherries, strawberries, oak, vanilla, licorice, spices, green pepper, earth, leather, animal notes, chocolates, tobacco and peppercorn.
Medium to full bodied and smooth, with medium acidity and long legs.
Dry on the palate with blackberries, blueberries, plums, cherries, oak, vanilla, earth, dirt, thyme, cola, licorice, spices, chocolates, smoke and black pepper.
Long finish with medium tannins and cherries.
A great 5 year old Shiraz from Australia. I kept it for a few years in my cellar, and it was worth it. Well balanced now, complex and interesting, but still a tad bitter on the ending.
Needed 4 hours to open up properly.
Still young and needs a couple of years in the bottle to mature.

Yellow white in color. Clean floral and honey aroma. Crisp in mouth with slight astringency at tip of tongue. Soft, lemon flavor in middle, not bone dry but between dry and off-dry. Candied Cherry and pomegranate with soft floral tones. Delicate structure with juicy texture and good acidity that doesn't make itself known, it just lifts the fruit and frames everything beautifully. To be honest, if this was placed in a blind-tasting, I can see it being mistaken for a Burgundy. The nose is a savory herb garden intermingling with crushed violets, peppered with spice and cedar. Soft and lithe on the entry with a focused arrow of acidity on the backend, Hyland glides onto the palate with fresh cranberries, orange peel, and pomegranates and finishes in fresh mushrooms and peppercorn.
