This is an indigo-black wine, with nose that shows a lot more tar than the 2004 does. Savory notes abound. The palate offers firm tannins, but nothing scary. Blackberry fruit comes off as if it’s been trampled underfoot and gets an overlay of spice rack. It finishes long and savory. — 8 years ago

A textbook color of ruby red. Terroir driven for sure, the nose is a plume of earth and pure red fruits. The palate has a gentle femininity to it, beautifully elegant and classy. The tannins are smooth as silk, the finish a persistent echo of the terroir. — 11 years ago

Caramel apple-banana brûlée top notes, pear and spice underneath, still-pert lemon zest and peach custard, too. Palate delivers that Cali-leonine body -ie big! - but with enough brisk acidity to keep things more than decent. Long, with flavors that echo the nose and all around beautiful balance. Drinking super well at moment, near its peak and rewarding this bit of bottle age with plenty of secondary characteristics. There are expensive chardys coming from Beechworth, but not all of them
The quality of the fruit is superb, well over the average of the country
Stylistically they use oak, but thanks to the flesh of the wines it is less prominent than what the classic oaked chardys were
In this case we have a little extraction of colour from the skins.

The high rating is not because I love Aaron Pott, it is not because we were eating at Echo and Rig in Vegas, it is not because the Somm here said it was fantastic when he tasted it... it was simply because it was awesome. Paradise Springs a Local winery to me developed a well balanced Cabernet that could compete with any Napa Cabernet that I currently have in my wine cellar. Hitting all the necessary smokey tannins and with deep hints of tobaccos and rich flavors of blackberry. Hints of oak seep through the richness of the wine as the dryness of the Cabernet leave and echo of desire to drink more. Truly a wonderfully rich wine for such a local winery. I love the Echo label made by Lynch, and this was a power house of a Bordeaux. Brick wall of tannin even 4 hours later and after 60, yes, 60 hours of decanting, the flavors being masked by high acidity and tannin of a young wine finally had their 15 seconds of fame. Dark rich flavors of creme-de-casis and blackberry tart, and gravelly minerality, with a toasty oak undertone and still finishing with a firm tannin but just more enjoyable than right out of the bottle. — 10 years ago
