Yeah, you've got it. It's to separate those nasty aromas that you might get from mercaptin in unhealthy reduction environments. The winemaker at Von Winning first used it around me and I stole it from him. It's pretty complicated and I don't totally understand it, but it starts from having sufficient nitrogen levels in the ferment to create a healthy yeast population, from there it involves longer term lees aging. The lees act as a battery to suck up oxygen, so they keep the wine fresh, but they also impart and aroma, kind of like autolysis. For me it's easiest to spot in Burgundy because Chardonnay is so neutral. It shows up as a sort of shaving cream and marshmallow fluff aroma, sometimes mint. It also compliments mild new oak. Coche or Roulot would be big Burgundian practitioners, but there are many others. In the new world it's easily spotted on the Chardonnays of Kongsgaard, Sandhi, Aubert, Ceritas, Kumeu River and Montelena, just to name a few.

Lovely mind zapper, as it is a delicate Gruner made with a Loire ideal, influenced by Vouvray & Muscadet.

Carrying a heft due to extended time 'sur lie' that lets the lingering mid-palate take on some oomph, this Gruner crackles with coastal scents, a hit of salinity, and a lively electricity from the native yeast, freshened acidity, and savory seaweed flavors that holler for seafood!

I'm thinking crab & chanterelles frittata, laced with bacon and cheese and a lazy brunch as a relaxed pairing to this gem.

Only 22 cases for the inaugural effort, but Mike Franchere (who is 6th generations deep into Oregon history!) will make more Gruner from these vineyards, and it'll be a stroke of luck for all of us to enjoy these bottles. — 10 years ago

Tres pleasant: Strawberry jam, rhubarb pie, candy cane and gun flint on the nose. Continues to cocoa nib and suggestion of American Spirits. Bit of Bourbon barrel finish. Best part? The balance. Has a signature Dry Creek quality together with lots of Italianate astringency. Cotton candy holler back. *Nice* — 11 years ago

Aramon?! I had never heard of this grape. Not to mention this region... Sorta floral, light bodied, intensely flavored with red fruit just barely baked, chewy tannins, long finish. Anyway, fun new stuff for me. Holler if you know it.
