Had this at a 7 course Cento Pasta Pop up that consisted of various dishes consisting of beet , Uni to lamb pastas. The popup was at Simbal a Vietnamese restaurant which as devoid of Italians but this Lone Siciilian was up for the challenge. bold but not overly fruity with just the right amount of acid to keep things interesting throughout the meal. Rose just this side of bitter, with peppery notes and full mouth feel. Heavy pasta at Cento Osteria helped, but the rose itself had a very long anf tart finish! — 7 years ago
