It's going to be hard to cellar the extra bottle for at least another year. This paired perfectly with a garlicky Italian spiced homemade pizza plus a burrata salad but something tells me it would've paired just as nicely with dirt.

Really impressive the second day. Would try again and certainly decant the next bottle. With air loses baby fat and moves from boring cherry to much more interesting spice notes like cocoa and maybe nuts. Good acidity — 8 years ago
