Went to a Pierre Fernrand tasting, sampled sa 72' vintage and some of their other cognacs but they're one the more reasonable priced cognacs compared to the big name brands like Hennessy. Good stuff. — 8 years ago

Coucou Fanie! Il s'agit de la craie :) La terre à vigne dans la région de Cognac et la région champenoise est calcaire. Toutefois pour cette dernière sa terre calcaire est plus fine et poreuse, ce qui permet aux racines à vignes d'absorber facilement la forte teneur de minéral dans la terre, un processus biologique qui donne un goût de minéralité au champagne.

Sauf cette similarité de terre, il y a plusieures différences entre la région de Cognac et la région champenoise, notamment le temps (il fait plus froid dans la Montagne de Reims qu'à Cognac), le processus de production de vin (on fait la deuxième fermentation dans la bouteille de champagne), et les cepages pour la production de vin (un mélange de Chardonnay, Pinot Meunier et Pinot Noir en général est nécessaire pour faire un champagne, alors que pour faire un cognac, on a besoin d'Ugni Blanc, Colombard et Folle Blache).
