This wine smells like Yquem- honeysuckle, kerosene, flowers...acidity off the charts, crazy rustic tannins. what have I just drunk and how can I get more???

Chateau des Tours unclassified wine given the merlot blended in with the Grenache. Fruity spicy attacking flavor with dry clay taste. Paired with smoky 5 day aged quail sleeping underneath a thin blanket of beets and partnered with a black currant pillow on the side. The medium body wine and leanness of the quail go great together in terms of texture. The black currant too strong but the pillow beautiful

Beautiful pairing with duck. Strong tannins, medium to light bodied. Balances out quickly after opening. Enjoyed this at Momofuko Saam Bar with the duck dinner.
