2007 vintage. Took an hour to two to open up and find its balance. Was acidic at the start both in nose and taste. Fleshed out and softened with time. Pepper on the front. Just a lovely Rayas. Shouldn’t drink too fast!

Drank this also with crazy québécois and a generous Frenchie. Initially a bit bretty and not particularly charming and the warmth of the vintage seemed to have dulled it, but then after about 30min it totally cleaned up and blew off and then revealed layers and layers of enchanting spicy floral tea and savory notes and most miraculous of all candied little red fruits and such a texture. Next one I open, I'll be sure to decant.
