Brasserie Cantillon
Classic Gueuze Lambic
Brussels, Flanders, Belgium
I rarely post beer on Delectable, mostly because I have a different app for that but Lambics get special consideration. And as far as Gueuze’s go, it doesn’t get much better than Cantillon’s Classic. Lambics are one of the few beers that can stand extended aging and this 375mL was bottled in 2016 so it’s still pretty young. This is hugely crushable and just about everything I want in a Gueuze. Bright stone fruit, earth and minerals. Incredible balance. Lovely acidity. I could drink this all day long and pairs well with almost any meal.

Not the biggest beer guy, but this is a complex and intriguing Lambic. High toned Burgundian notes. Raspberry and fungus with a long citrus finish. But what do I know about this stuff?
