Very interesting! I had this same vintage nearly a year ago, and that bottle was VERY different! Where the last one had a lot of oxidized notes, classic older characteristics, and seemed very fragile, this bottle seemed more lively, with time to spare. There was elegant subdued fruit- dried cherries, and blackberries,dusty cocoa, pencil shavings, and a bit of white pepper. The tannins were refined and the finish was on the longer side. It was fantastic with a Parmesan and black pepper soufflé.

This wine... Well, depending on what it's paired with, could range from ok, to very good. It was definitely starting to fall apart, but was still interesting with notes of oxidized tomatoes, black olive, raisin, prune, dried violets and warm potting soil. We had it with a 75 day aged prime rib eye, and the two were very harmonious. The age on both the ribeye and the cabernet melded well and elevated each other. I think this wine would be overwhelmed with any strong spices or sauces. It was very gently decanted just before we enjoyed it.
