Upon opening I was greeted with a muted nose, something I’ve never experienced with champagne. On the palate however you could feel the acid percolating. I asked the sommelier if she would, please decant. She gave me a “are you sure” look? As with several champagnes this was grand crew Burgundy with bubbles (and not many of them). The nose started to reveal some bread and cider scents . On the palate a perfect balance of fruit and acid that made this way too easy to drink, Impeccable balance. Air pumped this up, but it never caused it to lose its balance. If I were to nitpick I would ask for more length on the finish. I think that will come with more time in the cellar. Ps; I had this with a hamburger..
