This was like a partly developed Alsatian Riesling, and it's petrol-y earthiness, lemon, and honey went beautifully with a hummus-like salad course during our meal at Verjus in Paris. — 10 years ago
Verjus like nose and on the palate when first opens. Subsides, but still great acid throughout. Opens into apricot honey, flowers, a touch of minerality and creaminess on the nose. Lemon and grapefruit followed by apricot on the mid palate through the finis. A touch of honey and lactic acid to round it out. Very complex and balanced village level puligny

Elliott and I went to Paris for the first time, and this was a discovery from Verjus, which is now our favorite-ever tasting menu (it was our first dinner of the two week trip--of course!). On to the wine...this was electric paired my favorite seafood dish ever--seared scallops with fennel and potato purée and pickled radishes.
