The nose was perfumed and intense with dried flowers, rich black cherry, roasted nuts, exotic spice, balsamic tones, gravel dust and hints of undergrowth. On the palate, it was silky with vibrant currents of acidity ushering in dark fruits, cedar and spice notes. Classic traditional wine and food in Valladolid, Spain. Tinta de Toro (Tempranillo) with Cordero Lechal (baby lamb) roasted in a wood burning oven. A-mazing pairing! The wine, typical the producer San Roman was exuberant and fresh, with blueberry, cinnamon, bing cherry and licorice notes. Rose and herb aroma, light rose color, cherry flavors, some earthiness, hints of spice, nice acidity, firm tannins. Nice dry finish with fruity and smokey notes. Still very young and could age for bit. Soft, but complex. We decanted and I chilled mine just a bit. Luckily, we have 2 decanters as my husband does not like chilled wine. Paired very well with a bolognese sauce with fresh basil and parmesan. — 11 years ago
