👃 Smoked burnt buttery brioche covered in cooked fallen apple, charred honey & minerals w/ citrus curd, vanilla & an oxidative backbone
👄 Med bodied mousse of short lived bubbles in creamy buttered old green apple & slight tart crisp citrus pie w/ a touch of dry minerals
🎯 Long dry crunchy burnt fallen apple & citrus toasty linger w/ a drying minerality

Nothing better than inexpensive white Bordeaux with some age, the youthful acidity just fades away. The Dourthe (Thienot) is one of our perennial favorites.
Nose is heavily on lemon zest, freshly cut grass, cold apricot and steely minerals.
Palate has muted lemon, hint of tangerine, lemon grass and lightly sour green grapes.

Fresh, aromatic, crisp, nose is somewhat tropical, leading into flavors of toasted almonds, apple and lemon zest. — 7 years ago
This is a very complex Champagne with earthy, nutty flavors and a hint of stone fruit. I'm looking forward to enjoying another evening trying to parse out its rich flavors. — 10 years ago
