'95 Pinot Gris - still a little young and needed some opening up. Golden honeyed flavors with yellow pear, Apple, lemon peel, some slight spiciness with enough acidity to cut through most foods. Paired well with caramelized duck at Sepia. $197/bottle — 9 years ago

Incredible. I think Portuguese wine is so underrated. This had the complexity of a Barolo. Tannic but elegant, the fruit still present even at that age. Coworker said it drinks like a sepia photograph, love that. — 10 years ago

Certainly the rustic expression of Trousseau: bitter herbs in aroma, plenty of acidity. It's currently like great Trousseau in sepia but traditional wines have a way of becoming younger as they age. Will check in on this one again. — 10 years ago
