Fruit takes a back seat in the 2012 Elk Cove Roosevelt Vineyard Pinot Noir. This is a portrait in savoriness. Aromas of Spanish roof tile, sun dried tomato, cigar box and sage seamlessly merge into tart cranberries and dried cherry notes. Firm, dusty tannins hem in high-toned red fruit and taught acidity that terminates with a flourish of dried herb and bay leaf. This is the sort of Oregon Pinot Noir that will reward patience. I've love to revisit it in a decade or so. Sample — 8 years ago

The Kir-Yianni Ramnista 2009 is 100% Xinomavro, an indigenous variety that is lauded as the noblest red in Greece, the root "Xino" means sour and "mavro" translated, means black. Does it live up to its name? The nose is a gathering storm of black olive tapenade and black currant aromas, leather, violets, smoke and coriander seed. On the palate, brash, slightly astringent mid-palate tannins hem in juicy Italian plums, iron ore, wild game, and yes markedly high acid. Needs time. 14.0% ABV — 9 years ago

Als olors, a mes dels propis varietals hi ha el de flors vermelles. A la boca es un vi rodo amb determinacio que a mes dels fruits rojos propis: maduixa, grosella, gerds te algun toc de fruita tropical: mango, papaia...

The Drappier Brut Grande Sendrée is a refined blend of 55% Pinot Noir and 45% Chardonnay. The house prides itself on minimal use of sulfur and low dosage—the 2006 is voluptuous with layers of dust, walnut shells, and mahogany wood that serve to hem in fleshy, ripe orchard fruits and citrus notes. On the palate, the mousse is super fine, merging with bright acidity and wet dough on the back palate. This is a Champagne that I would like to revisit in a decade or more, certainly I am keen to watch its development. — 8 years ago

Another lovely and lively California sparkler from a vertical tasting of Gloria Ferrer's Royal Cuvée Bruts. The 2001 is as charming as the other vintages I've tried, though it shows an evolution in the house's style—a trend toward a lighter, slightly softer, fruitier bubbly. It's delicate and focused, like Chantilly lace, inlaid with traces of mineral veins that hem in notes of anise, blackberry and brioche held aloft by a fine, frothy mousse. 12.9% | ABV Sample — 9 years ago
