Evokes springtime with flowering plants and pollen circulating. The primary aroma here is honey and spicy phenolics, which remind me of clove, ginger, pepper, candied lemon drop, and banana. Delightfully airy texture, a fine mousse like the finest champagne but better because it persists. Great acidity. Tropical fruit like pineapple, along with citrus, with a touch of caramel sweetness. There is some skunkiness that I didn't get when I tried this on tap, but I think it adds some funky character that doesn't detract from the balance. This is the definitive saison, complex yet refreshing, and might surpass regular Dupont and most saisons of the world. — 11 years ago

Generally not a fan of hoppy Saisons, but this is really interesting. The Mosaic hops provide a floral lift that elevates the typical saison notes while the brett adds a nice bit of funkiness to the finish. A cool brewery making interesting beers. — 10 years ago

Brown shugga, cinnamon and grassy spices. An enormous amount of carbonation, it practically fills your mouth with air. Starts slightly sweet with the same caramel and licorice flavors, but finishes dry. Deceptively light and easy, despite it’s 8%. Named after an infamous French bandit which the owners are related to. Americans, try this, though it will ruin your taste for domestic saisons for life. — 11 years ago
