On the palate flavors of strawberry and raspberry with cigar box, oak, tea, citrus and herb floral notes. Well balanced, savory fine tannins, long finish ending with oaky earthy notes. Pale straw color with a slight green cast. Piercing aromas of petrol and wet slate with slight hints of white flowers and lemon/lime. The palate features ripe red apple, white peach, lemon and lime with a light touch of spicy ginger. A bit of a chalky texture which is well balanced by bracing acidity. A bit of CO2 bubbles in the glass. Long and lingering finish. Great with food. — 8 months ago
It is a dark purple wine, with a nose featuring ripe blackberries and cassis, vanilla, tar, cigar and clove. The palate is quite nice, with cherry, blueberry and raspberry flavors draped with a bit of oak spice and offering a silky set of tannins. I paired it with a rib eye and used it in my skillet mushrooms. The wife gave me a big thumbs up, so I know it worked. — 9 months ago
1hr+ decant and could have used more. Dark red color. Interesting nose with metallic, medicinal tones that tingled my nose. Wine has massive strawberry and cassis; and is sweeter than I was expecting. Very concentrated. The tannins reduce with ample air and the spicy aspects dissipate with time as well making it more approachable. Medium finish. — 3 years ago

2024/2/13. This is multifaceted, with different elements emerging and submerging repeatedly over dinner. By turns firm and earthy, young and gangly with a touch of oak showing, and wildly aromatic, as is typical for young Chevillon wines. This Cailles in particular showed strawberry and watermelon coulis, cherry, spices such as cardamom and sweet game. On the palate it’s fleshy, broad and on the low side in acid, but that’s relative - though still tannic and a bit awkward, it’s balanced and enjoyable — 4 months ago
4th wine of BYOB blind. Very light with a slight effervescence, leading us to call this as a natty pinot. Was surprised it was such a classic. Have had Mt Eden Pinot before and this was not in the same neighborhood of depth/forest floor. Alas, not my favorite vintage — 4 months ago

A sublime Napa Pinot Noir: light and delicate, yet hearty on the middle of the tongue with a smooth red fruit forward finish that brings it all home. Perfect pair with a red meat meal or will do quite well solo with a light snack. Bravo! — 9 months ago

See previous note in August 2022. Vines planted in 1961 in the Eden Valley. A fuller riper style than the usual Pewsey Vale - still finishing dry. Aromatics of Lemon and Lime. The terroir and the quality of the fruit showing through. Not a hint of TDN (Kerosene/Petrol) showing through. Could cellar for another 3 to 4 years if desired up to its 10th birthday. — 4 months ago
One more example of why I obsess over 1991 California cabs. Your nose is greeted with the whiff of an antique furniture store that soon gives way to red fruit, cedar and earth. The first thing you notice when you start to drink this gem is the vibrant acidity. The palate follows the nose only to be joined by slow resolving tannins. On the palate good density , with a creamy richness , those lemongrass , ripe apple , slightly spicy notes . Slightly rich and weighty though with lovely balanced acidity and good length .
