Golden straw color, clear with no cloudiness, bright. Very complex on the nose, aromas are the highlight of the wine for me - bees wax, vaseline, white flowers, camomile, quince and tejocote. Medium acidity, with flavors of quince, honey comb, and it finishes with a alightly bitter herbal green, i can pinpoint exactly but its as if i bit into a fresh camomile flower, herbal and pleasant. Nice tealike texture on the palatte, similar to a Rhone white blend of aged loire Chenin blanc. No funkyness, kombucha or beer like notesusually present in other orange wines, its very clean. Single parcel , just outside Jerez. 6 yrs. Under flor.
N: Bread dough and seashells, saline, the inside of imagined bodegas.musty. With time out, vanilla and nutmeg. Citrus peel.
P:Light, Crisp, Saline, salt , yeast, dough, rocks. Delicious.
I believe 600 bottled.

"Blanco" Cabernet Sauvignon 2020

First it is important to point out that even though is a cabernet sauvignon this is a white wine, it is very fruit forward, mainly red apple, dried fruit and even some cherry on the nose which is not common for a whit wine, even though is fruity on the palate is not overly sweet and has a very nice dry finish. — 3 years ago

P: Distinctly chamomile, very light yellow, crunchy, acidic, tart. Long mineral finish. Little evidence of barrel or air, yeasty but restrained.

Fino Una Palma Jerez-Xérès-Sherry Palomino Fino 2020

Very impressed by the Palmas series, a special release of “en rama” sherries from selected casks from the Tío Pepe solera. Traditionally, cellarmasters in Jerez would mark exceptional casks with a chalk drawing of a palm tree branch (palma in Spanish), potentially adding more branches if those wines continued to show finesse and delicacy as they aged. To make the selection, González Byass’ invites different guests (mostly wine critics and somms) every year, an honor that befell Ferran Centelles (El Bulli) in 2020.

The 2020 Una Palma comes from three casks from the Tio Pepe solera with 6 years of aging under flor, bottled unfined and unfiltered (en rama). Sharp nose with notes of almonds, yeast and hints of citrus. Fresh, mineral and very saline. Much more intense aromas and flavors than the regular Tio Pepe
