This grower Champagne from Paul Dethune opens with pretty, almost coquettish aromas of alpine strawberry, cherry crumble, roses and the merest hint of earth. And while the Pinot stands out—it should it's 80% Pinot Noir and 20% Chardonnay—prolific bubbles lead into an unexpectedly intense, tensile acid spine that arcs and releases into chalky repose. Wow, the acidity took me places! The nose is pretty clear and quiet: stones. I agree with Chaad; the palate is bitter with fruit like lemons and riper stuff, and the texture feels creamy. Most of all, I liked how the acidity came, went, and returned: waves, arcs, and angles. — 9 years ago
