Sourced from 4 vineyards, early harvest, small, ripe, intense berries, wine was aged for 10 months in French oak (42% new), light Ruby, aromas of tart cherry and dried fruits with spice and cedar notes, very complex nose. On the palate blueberry and raspberry flavors with sweet spice and toasty tones. Soft tannins, well balanced, vivid acidity, lingering ending with a gentle oak and fruit character. Small production. This 2011 Tamarack Cellars Ciel du Cheval Vineyard Reserve Red Mountain Bordeaux Blend. 42% Cabernet Sauvignon, 29% Merlot and 29% Cabernet Franc.

The aromas are full of dark fruit, black raspberry, black cherry, black currant, cocoa, violets, tobacco, spice, clean soil and a mineral component.

The palate confirms the nose. There is exciting dark fruit, cherry, black raspberry, black currant, clove, mocha, black pepper, graphite and an earthy soil.

This wine is full bodied with a silky smooth mouth feel. There is medium + Tannin, medium + acidity with a long smooth finish. Very impressed with this wine. Happy Fathers Day and have a safe rest of the weekend. Nostrovia! 🍷🍷🍷🍷

Caymus 40 was the wine that started it all for me on my wine journey. While 42 isn't as good, it is still one of my favorites. Not your typical cab, probably not for traditionalists. Overtly Jammy with good oak. Right away black fruit: highlighting black berries, medjool dates and dark cherries , hints of vanilla, cinnamon and chocolate starts on the nose through a long finish. I've done a Spanish Cava and Jazz night before but Jazz and Shiraz was new for me. And it was absolutely perfect on a chilly Perth evening at @tartscafe with a beaut bottle like this.

Deep seductively sexy shade of red in the glass (good one @towardmusic). Rich aromas of warm sweet berries and is just plain intoxicating on the nose. It caresses the palate with alluring tannins and flavours of mulberries, chocolate and a nice black pepper & berry zing which carries on well into the night. $42 a bottle at Tarts and it's also organic & vegan. All opinions are based on my own taste buds. #wine #tcweekdaywine #shiraz #perth #jazz

Bracing acidity that seems reminiscent of a Barolo underneath a core of beautiful pure fruit. Red berries and black plum with a bit of apple and rosehips. There's a bit of spicy complexity just starting to peek out. I expect this to peak nicely in two years. — 11 years ago

A blend of 58% Chardonnay, 42% Pinot Noir, pale yellow with crisp aromas of stone fruits with a touch of floral scents. On the palate pear and apple flavors, some citrus nuances with fine bubbles and light mousse. The finish has a creamy texture, well structured, ending with toasty notes and yeasty tang that lingers. This 2011 has good aging potential. I still have some 2007 in my cellar that is tasting great now. — 9 years ago

Great example from Languedoc, Faugéres. Simon Coulshaw is a great winemaker and I love his wines, they are really worth a try. This one is a velvet like wine with character. The tannins are smooth but lasts long. We drank it to a grilled lamb filet with a red wine and balsamico based sauce. It was just perfect! — 8 years ago

Sonoma County Cabernet Sauvignon 1974

Upon opening, my first evidence was the spongey cork, saturated top to bottom, of this 42 year old cab. I thought it would be either corked or port-like... it was... that is, right out of the bottle. I could not get past the musty, pungent smell and was ready to toss it... my wine bud, Andy Laursen, shouted, "WAIT!" He decanted it and we waited a bit. After a mere 5 minutes, it had calmed down considerably, blown off the must, and the fruit started to come out. Then some soft milk chocolate flavor emerged. The sharp initial smell shifted to a subtle chipotle smoked vegetal matter after an hour. After 2 hours, I was astonished to sense a pure blueberry nose, and the taste buds were singing fruit and sweetness. There was nothing at all resembling the first moments opened. Thank GOD for Andy's rescue. THE most memorable transformation I have ever experienced. And, the deep red and clear visual has been a sight to behold. — 9 years ago
