Paired with porchetta, sautéed spinach and aged provolone ravioli by Vera Pasta with sweet tomato gravy. Was great upon opening and held steady throughout. Naso di ginestra, spezie, vaniglia e frutta gialla tropicale sovramatura, dolce di cassata siciliana con tanto di note di ricotta ( malolattica svolta), sapidità forte. Chiudono le note di canditi di agrumi che si ritrovano in bocca con una acidità balsamica che bilancia una spiccata dolcezza al palato. Sontuosa morbidezza di crema pasticcera con buccia di agrume. Lunga ma non invadente. Elegante x il contrasto impeccabile fra dolce e salato. Affascinante per la spettacolare integrità del frutto maturo che ha trovato complessità grazie all'evoluzione ed alle note lievi di ossidazione che concorrono ad interpretare una spina dorsale amaricante semplicemente splendida in contrasto con la dolcezza.
