Unlike ice cider or frost cider made in the United States and Canada, apples are frozen using refrigeration technology meaning the frost only goes one way--in. In nature, apples will freeze, thaw, freeze partially and unfreeze partially, moving sugars throughout the apples. You'll notice a difference in style here because the producer oxidizes the cider as a way to compensate for the artificial freezing process, but it's still a delightful dessert choice on a list. "The 21" - a blend of all 4 vineyards, labeled as the 21st anniversary wine - from memory, there were severe frost issues necessitating the release of only 1 wine in 2006 - a little brown in the meniscus but a lovely nose with a bit of dirt, spice & smoke - restrained but satisfying on the palate with lovely lingering acidity on the back palate - very enjoyable & will hold the other one for a few years. — 10 years ago
