Superb companion to a wonderful homemade foie gras mi-cuit. Spices, elderflower, honey a bit, white flowers. Wonderfully balanced palate with a strong acid backbone, a touch of SR conferring a slight roundness to it, spices, a good grip to compliment the fat from the foie gras, and a very long finish with elder flower. Nice concentration and great depth with white peach, baked lemons, a hint of elderflower and some white tea accents. On the palate surprisingly powerful with peach and steely lemons and crushed rock minerality. Excellent finish with the mineral, lemony presence lasting for several minutes.
