The limestone pokes through in a brilliant acidic manner and cuts through the scotch tape/honeyed pear skin/styrofoam aromas, but the palate has a blip of honey before being cleaved in three by that samurai acid. Man this is great! And yes, that's pizza. Second time doing this pairing, and let only he/she who has tried the pairing cast the first stone--because it's one of the weirdest, most instant gratification pairings out there. Drinking out on the deck without a jacket on Christmas in Connecticut. Surreal.

Ah, the wine. This is the best white Crozes I've had. Gorgeous nose. Flowers, honey, sweet straw, bitter deep pear. Waxy, ripe, earthy, minerally. Great length. Put a piece of tape over the "Crozes" and I'd believe you that this was a white Hermitage. Delicious. ($22 from Fass Selections)

Bourgogne Pinot Noir 2012

I had to demystify this. It plagued my mind at night for many weeks and months on end. Finally met this baby...and:
The craftsmanship goes far beyond what I could imagine in non-declassified Bourgogne. It's obvious this comes from no noble terroir. The exercise of the winemaker is on complete blast here. Concentration, intensity, long finish, massive aroma, all holding together like some monumental structure made out of craft paper and tape. And all throughout the whole thing not a hint of any other than perfectly grown and immaculate grapes is coming through. This is genius. I can't tell you it's inherently going to knock YOUR socks off. This wine is for the most intelligent and in depth contemplation you have at a moment. Given the price too, it's worth all of the effort just to let Coche prove to you what he's got as a winemaker. True creation is to make something out of nothing and this is exactly that. I can only imagine what he does with noble terroir.

Bourgogne Chardonnay 2010

Compact nose with a bit of B vitamin, honeyed metal and struck match or even slightly burnt toast a bit, scotch tape mineral character...you can sense the honeyed gras on the nose too. Tiny speed bumps of salinity emerge slowly. Lemon custard with subtle acid. How much of this is Meursault ? 45 min open and the minerality is this elegant enthralling scotch tape with a pin prick of acid on the tongue as a finish. Wow. Linear on some level but elegant and regal with attributes up its sleeve. — 12 years ago
