First time having a Soufflé and no better place than Le Soufflé in Paris. India went with the Henry VI Soufflé which is a cheese Soufflé with a chicken and mushroom sauce. I went with the beef bourguignon.
Deep ruby core with lighter edges and fine sediment. Aged beautifully with some dark plums, damp earthiness and moist tobacco leaves. Balanced with medium tannins (6/10) and medium plus to full bodied. Well integrated with dark berries, tobacco leaves, and solid acidity. Drink till 2024.

We finally managed to have a few bottles of Clos Saint Andre to taste. Very elegant and well done Merlot that shows great fruit and acidity, and has velvety and polished tannins. Decant 60 minutes before drinking or hold for 5 to 6 years. Really good wine, recommended. — 6 years ago
The nose is different. Much more woodsy and less fruit than I’d have imagined. The flavour profile was blackberry based and again, some wood. Some eucalyptus and green grass. Also some wet soil and cloves. The tannins weren’t a punch in the face by any means, but also haven’t haven’t completely softened as you might expect in a ten year-old. The palate was uninspiring as there was a watery-ness in the mid palate. I’m not sure whether this is over the hill or just not quite there yet and in a dumb phase? Will wait and see for the final two bottles. Solid, I guess. Not yet amazing. — 7 years ago

Pop and pour. Well, wow, I should have bought more of this. On the nose: dense plum, strawberry, cinnamon, intense without being over the top. On the palate: tar, blackberry, charcoal, dense and dark fruited...so well-balanced, fantastic length and juiciness and the finely grained tannin sneaks up on the finish. — 5 years ago
