This "Moscato di Saracena" (Calabria) Is made with a particular local variety of Moscato grapes, dried at the sun for the 85-90% of the total. This juice is then blended with a 10-15% of dry fermented mesh to balance the sweetness and then re-fermented. Hard to explain but pleasant to drink! — 12 years ago
