Awesome pet nat to kick off the day before we go to Gyst tonight for a bubble bonanza. Lychee, honeysuckle and jasmine, funky kombucha-esque yeastiness, fresh grapefruit juice, and a green apple, saline Basque cider-y character. Nice juicy acidity keeps your mouth watering, and the texture and intensity of bubbles is so delightful; light but persistent bubbles make for an awesome, creamy mouthfeel. Just a tiny bit of perceptible RS. So yummy and I know I'll be crushing a lot of this stuff next summer; major beach day vibes with this wine.
