This bottle of the 1984 Insignia was opened about 30min before service and enjoyed over the course of a few hours. The wine pours a deep garnet with a slightly browning rim and an opaque core; medium viscosity with moderate staining of the tears and plenty of sediment. On the nose, the wine is vinous with notes of desiccated black fruits: blackberries, black cherry, Chunky beef stew, mushroom, eucalyptus, leather, organic earth and baking spices. On the palate, the wine is dry with medium tannin and medium acid. Confirming the notes from the nose. The finish is medium+. A mature wine what’s still lovely; full of secondary and tertiary notes. Medium lemon , light copper hue . Some light but persistent bubbles still. This is quite serious and rich on the nose , with some orange rind , walnut , touch of mushroom and meaty , soy hints . Quite rich , intense and dense on the palate but with good freshness still , long with orange rind and walnut. Perfect now and over the next 5 years or so . A lot of finesse and very smooth. Drinking from a red burgundy glass.

Has a nice consistent sweetness to it that is balanced by a citrus flavor such that it’s a pleasant sweetness and not sugary.

Used the Durand on the cork - soaked to the edge. Decanted for 2 hours.

This wine had some gaminess. Smooth. Fruit was a bit wild and overpowered by the savory flavors.

Paired well with the chicken skewers and onions. Needed complex flavors in the food to pair well.
