Made from sun dried Assyrtiko grapes, aged in old French oak casks for over a decade. The wine is riddled with volatile acidity, not surprising considering the production methods - and while that overwhelms the nose, it adds so much ethereal brightness to the palate. Prunes, lemon extract, fig, molasses, sweet medicinal herbs, wintergreen, quinine, pine sap, and dried flowers. Viscous, yet focused and expansive. 90% Assyrtiko, 5% Aidani, 5% Athiri.

2014 vintage. Pretty awesome. Ripe but not overly fruit driven. Definitely a little meaty funk. Makes me crave grilled octopus with citrus and Mediterranean herbs. — 11 years ago
On it self before din er - wow! Smooth, velvet, nice acid, very well balanced, from 2016 when we were at the winery, drinking now 2020. Yummie!

Outstanding, this wine has so much more than simply being sweet. Piney and resinous, it fluctuates between flavors of sugar dusted dried apricots, candied lemons, marzipan, and honeycomb with pine sap, pollen, chaparral, white balsamic, mint and blanched herbs adding a more savory complexity. Unctuous and long. 80% Assyrtiko, 10% Aidani, 10% Athiri.

Med lemon.
Clean youthful aromas with med intensity of lemon, honey, stone, jasmine.
Appealing dry palate, med+ bright acidity, high but well integrated alcohol, full body, pronounced intensity.
Long acid stone finish.
Very good wine, a blend loaded with the wonders of santorini: minerality and acidity. Mineral character, can drink now, suitable for further aging.

My first experience with Aidini. Complex little grape. The wine was straw yellow and a tad hazy. A bit of sweetness like a Viognier but combined with the crisp saltiness of an Assyrtiko. I liked it. — 8 years ago

Intense fresh sour black cherries, pomegranate juice, a whiff of black pepper, allspice.
On the palate this is fresh, with vibrant acidity and nice, juicy acidity.
This is on the leaner, fresher side with sour cherries galore… worked v. nicely with some grilled pork chops. — 4 years ago
