The color of the 2000 Pignan is a brilliant pale ruby color and slightly cloudy. Noticeably lighter in complexion than the others in the CdP flight. Yep…it has that scintillating, heady nose that is so unique to Rayas. Pine needles, wild strawberries, cardamom…woof. This bottle had some VA but I didn’t mind. Perhaps not the most exciting Rayas but I’m splitting hairs here. A very nice pairing with cassoulet, Toulouse sausage and duck confit. Drink now and through 2035. Merci Matt! — 2 months ago
Slightly cloudy garnet ruby core . Some herbal and slightly funky undergrowth , dried red fruits, dried mushroom , tobacco and dried spices, touch medicinal also. On the palate still some fruit , dried red cherry, those sous bois notes , rose and spice , liquorice . Balanced acidity, noticeable slightly angular tannin. Ok length with just a touch of warmth , slightly smoky finish . This is mature and should be drunk as I don’t see it improving. Drink Now and next 5 years . — 3 months ago

Over three years since I opened up the first bottle. Still young-ish but much easier to drink after a quick decant of half an hour. All the typical scents and taste of C9DP. Very balanced. Clearly from a warm climate but retaining ample freshness. Like it a lot. Hope I can keep my hands off it in the coming years to check in on the remaining bottles every couple of years — 3 months ago

Talk about an enormous wine. The 2005 is downright youthful and packed to the gills with fruit and character. Dark fruited with anise and black pepper. It was just so dense that everything seemed locked up right now…and we can thank Mourvedre for that. This was very tasty with cassoulet, Toulouse sausage and duck confit. If I were going to open another one of these, I would probably hold until 2030 and this will probably last for another 25 years beyond that.
