What a great wine! We paired it with a salad Niçoise and it was perfect. The acidity cut through the richness and the minerality and a teeny touch of bitterness paired well with the earthy tuna. It was refreshing and worked even with the mustard vinaigrette. Its structure let it stand up to the saltier elements. Huge thumbs up for this one.
