Good acidity, lovely balance , rich though still mineral on the finish, structured. Color of saturated ruby, fading away around the rim. Nose of dark fruits like cherry jam, and crayon. A big dull so I decided to let her breathe for a while. After ~ 10 minutes, nose shows some more strawberries, tobacco leaves, some balsamic vinegar, but still quite reserved. Taste of good quality acidity and tannins, black tea, cherry jam, more tea like flavors, peppery and zesty. Quite classical Chianti Classico Riserva. Aftertaste is an extension of taste, medium long and mellow tannins. Enjoy her now. The nose is a bit dull and that is the only complaint, as the wine is pure and tasty. — 5 years ago

Color of pale yellow with bubbly nature. Nose is amazing and abundant. Waves of fragrances like ice wine, flowering note, grapefruit, passion fruits, zest, spice, butter, pepper, and ripe peach are coming waves after waves. Taste of subtle acidity, dry in nature, peppery, a hint of sweetness, ripe melon, zest, grapefruit, lime, a bit salty, and a bit jalapeño. Aftertaste melon, grapefruit, zesty note, flowering and grassy note, and medium long. This wine is a killer if you enjoy a light but vibrant white wine. Try it at room temperature. — 7 years ago

Magnum. Call it like you see it, drink it like you taste it; from a bad vintage or that is a vintage of a lot of rain at harvest. Jesus this was good. Perfect balance of acidity, toast, Carmel-curd. The White Burgundy was excellent but, still have to have my BSR 375ml. It’s been awhile for us.

It is a little better tonight following the Burgundy & soft white cheese.

The nose on this bottle really flows out of the glass tonight. Beautiful lean fruits of; blackberries, black cherries, cherries, strawberries, watermelon near the rind, blood orange, orange & tangerine & some pomegranate. Crisp volcanic minerals, saline, sea fossils, baguette crust, vanillin, whiff of caramel, soft white spice, pink flowers and rose pedals.

Everything on the palate sings just a little louder tonight as well. Fruits are even a little richer than normal. Ripe & slightly gummy not as normal leaner fruits of; blackberries, black cherries, cherries, strawberries, watermelon near the rind, blood orange, orange & tangerine & some pomegranate. Crisp and grippy, volcanic minerals, beautiful softer, powdery chalkiness w/o quite the sharper edge it normally has, soft, hints of Provence herbs, saline, sea fossils, baguette crust, vanillin, whiff of caramel, soft white spice, pink flowers and rose pedals. The acidity is crisp, lively and dead on as alway. The long, rich, well balanced finish is deliciously refreshing and persists minutes.

One of our favorite Rosés. Now that the 15 has settled in the bottle for year, time to enjoy. It's simply just better a year down the road. On the nose, bright, lean fruits of; strawberries, cherries, tangerine, watermelon. Sea spray, limestone & fresh pink florals. On the palate, the body had a presence of gluey. Fresh, bright, lean fruits of; strawberries, cherries, tangerine. Watermelon, grainy minerals, limestone, perfect level of chalkiness (big but not overpowering the fruit), saline, pink flowers, beautiful, round, soft acidity and a round polish finish 50-50 fruit and earth. Photos of our trip there in April 2016. Estate vines, large oak vat cellar and road signage. Added, are those beautiful Mourvedre grapes being harvested. — 7 years ago

Deep Ruby with concentrated aromas of ripe black fruits and earthy floral spice. The palate shows rich blackberry and tart raspberry, complex, good acidity, balance and depth with ultra-smooth tannins. The long finish ended with an earthy and woody spice, cacao, and mushroom, very smooth. I corvined this last weekend and put it back in storage for tonight. I had a very different experience & thoughts on this wine last weekend un-decanted. This is wine comes from a period when I loved Caymus. After 2011 when they started picking later and at higher brix’s, they lost me but, got higher Parker scores and rave words from people that like sweeter Cabernet that drinks young.

Last weekend without a decant, very dominate bright cherries and vanilla.

Tonight, the nose reveals, dark, slightly syrupy currants/cassis, blackberries, dark cherries, creamy, black raspberries, blueberries, black plum with lots of skin dominate, baked strawberries, black licorice, vanilla, some clove and a touch nutmeg, underbrush, dry crushed rocks, dry top soil, volcanic minerals, black tea, touch of black coffee expresso, liqueur/dark berry cola, used leather, hints of graphite with ruby, fresh, dark, fresh, dark, red, blue florals with violets.

The body is full, sexy, gorgeous and voluptuous. The structure, tension, length and balance are at the start of its high point with another 7-10 years of good drinking ahead. Dark, slightly syrupy currants/cassis, blackberries, dark cherries, creamy, black raspberries, blueberries, black plum with lots of skin dominating, baked strawberries, black licorice to deep anise, vanilla, some clove and a touch nutmeg, caramel, mocha, dark chocolate, dark spices with just a touch of palate heat, underbrush, used leather, dry crushed rocks, dry top soil, volcanic minerals, black tea, touch of black coffee expresso, liqueur/dark berry cola, used leather, hints of graphite with ruby, fresh, dark, fresh, dark, red, blue florals with violets. The acidity is like a needed waterfall shower. The long finish is, deep, dark, well balanced, elegant, ruby, ripe, polished and persists endlessly.

It’s been awhile and I’ve missed it. This is a very good example of why I used to adore Caymus.
